Food & Beverage Director (Food Services)



ESSENTIAL POSITION FUNCTIONS:

Food and Beverage:

  • Manages, trains and observes service team members in all technical and non-technical aspects of their role including restaurant and lounge standards of quality and service.
  • Create team member schedules to ensure demand staffing patter and budget, monitoring and reporting labor details.
  • Manages restaurant and lounge to ensure proper room preparation, including set-up of tables, chairs, linens, table settings, glassware, etc.
  • Manages, trains and observes American table service standards by service staff.
  • Confirms that all service staff are in proper uniform and adhere to appearance standards and conducts pre-service huddle with all necessary staff.
  • Manages, trains and observes team members on enhanced order taking and use of POS.
  • Manages and observes service in all food and beverage areas and events, acknowledges and greets guests.
  • Rounds all food and beverage areas ensuring guest needs are met.
  • Monitors, evaluates and supervises team member performance, retrain as needed.
  • Tracks stock levels of food, supplies and equipment, forecast needs, and oversee ordering.
  • Adhere to and enforce team member compliance with health, safety, and sanitation standards.
  • Tracks, manages and reports on financial performance, inventory, and personnel status.
  • Communicates with Chef, service kitchen staff regarding reservations and/or special events.
  • Conducts weekly beverage inventories and quarterly china, glass and silverware inventories.
  • Opens and closes restaurant and lounge areas on a regular basis and ensures all is secure upon departure and that all lights, equipment, doors, etc. are turned off or locked.
  • Maintains effective profit and loss controls, maximizing food and beverage sales by identifying and marketing special events and training team on "suggestive selling."
  • Maintains guest satisfaction by handling inquiries, concerns or comments and providing service recovery; acquiring feedback from guests to ensure satisfaction and/or implement service improvement.
  • Westminster Communities Alcohol Training certified within 7 days of hire

Licensed Building Dining Services:

  • Responsible for the strategic planning and operations of the department by implementing cost control measures and meeting budget goals.
  • Plans and implements menus that meet residents' satisfaction and nutritional needs.
  • Ensures that training and certification needs are met.
  • Plans and coordinates selection, purchase, storage and maintenance of food and beverages. Ensures proper operation and maintenance of kitchen equipment.
  • Prepares and plans the Dining Services Department's budget and submits to the Executive Director for review and approval.

ESSENTIAL QUALIFICATIONS:

  •  Education: College Degree with Certified Dietary Manager preferred; or six years similar proven successful management experience in hospitality or Life Plan Community environment with catering and multi-location dining. 
  • Restaurant experience a must. 
     • Serv Safe Certification required or ability to obtain certification within 90 days of date of hire.
  • Certified Dietary Manager (CDM) Certification required, or ability to obtain certification within six months of hire. 

Experience:
 • Proficiency with computer programs including Microsoft Office.
 • Proficiency with data-base types of menu systems for menu forecasting, menu building and recipe creation.
 • Supervisory Leadership.

Requirements:
 • Ability to hold effective meetings.
 • Completion of Certified Dietary Managers Qualification within specified time frame.
 • Ability to learn computer programs as defined by Westminster Communities of Florida.

Experience

Required
